Chinese New Year 2023 #Oden

Instead of having a traditional style steamboat at home for Chinese New Year this year, why not try Oden?





Oden (おでん, 御田) is a type of nabemono, Japanese one pot dishes consisting of mainly several ingredients such as boiled eggs, daikon, konjac, and processed fishcakes stewed in a light, soy-flavored dashi broth.

Oden was originally what is now commonly called misodengaku or simply dengaku; konjac (konnyaku) or tofu was boiled and eaten with miso. Later, instead of using miso, ingredients were cooked in dashi, and oden became popular. Ingredients vary according to region and between each household. Karashi (yellow mustard) is often used as a condiment.


Oden is often sold from food carts, though some izakayas and during winter time, convenience stores in Japan also serves it, and dedicated oden restaurants exist. Many different varieties are sold, with single-ingredient dishes sometimes as cheap as 100 yen.





TIPS :

#1 S&B Oden No Moto : 1sachet powder (80gm) + 1000ml soup ratio.

#2 FUJIMITSU Oden Ingredients : Suggest to pour hot water over these ingredients first. This step helps get rid of the excess deep-frying oil from factory processing and keeps the oden broth clean. Once done, please feel free to just put these ingredients into S&B Oden No Moto broth above.


#3 Overcooking your ingredients is a big no no! The fish cakes and fish balls will become too soft and break easily, resulting in a cloudy broth. The fishcakes should have a springy texture, so the total simmering time should be 10-15 minutes!


#4 Prepare Daikon & Konnyaku properly

Daikon radish: Thick rounds of the daikon take a long time to absorb the flavors of the broth. When the daikon doesn’t absorb enough flavors, it’s bland and tasteless. Therefore, removing the sharp edge of the daikon pieces, scoring the flat surface of the daikon, and boiling it first before simmering it in the oden broth are all important preps you shouldn’t skip.

Konnyaku: As you are probably aware, konnyaku has a unique smell and it’s best to get rid most of it by boiling before simmering it in the oden broth.
